MORNING PERK

BANANA COOKIES

INGREDIENTS:

  • 1 serve Morning Perk Porridge

  • 1 small or ½ regular banana

  • ¾ cup hazelnut meal or almond meal

SERVES:

  • 6 cookies

 

 

EQUIPMENT:

  • oven

  • fork

  • bowl

  • spoon

  • baking tray

  • baking paper

METHOD:

Preheat the oven to 160C

  1. Mash the banana in a small bowl.

  2. Add the porridge and hazelnut meal and stir to combine.

  3. Roll into 6 tablespoon sized balls, the dough will be slightly sticky. Place on a baking paper lined baking tray. Press lightly to flatten with a fork. Place in the oven for 20-25 minutes.. Remove from the oven and allow to cool.

 

NOTES & TIPS:

  • Bake ahead and take 3 to work for an easy breakfast or enjoy 1 as a snack in between meals.

  • If the dough is too sticky add 1 TBS of banana until you are able to form a ball.

  • Great to take hiking

  • Store in an airtight container and eat within 3 days.
