EASY BANANA MUFFINS

INGREDIENTS:

  • 2 small ripe bananas

  • 1 egg

  • ⅔ cup greek yoghurt

  • 2 tbs honey or maple syrup

  • 1 tbs olive oil

  • 1 cup wholemeal self raising flour

  • 1 sachet Morning Perk Porridge

EQUIPMENT:

  • Blender

  • ½ cup capacity muffin tray

  • patty pans/baking paper

METHOD:

  1. Preheat the oven to 180C

  2. Combine the bananas, egg, greek yoghurt, honey and olive oil in the blender and blitz until smooth.

  3. Pour in the flour and blitz until just combined. Add ¾ of the sachet of porridge and blitz on low until just combined.

  4. Divide the mixture evenly in a greased and lined muffin tray. Sprinkle with remaining porridge.

  5. Bake for 25-30 minutes, until golden brown.

NOTES:

  • For a twist swap the egg for 1 tbs of chia seeds soaked in 3 tbs of water for 15 minutes.

  • High in fibre

  • If you don’t have patty pans try using squares of baking paper, or simply grease the muffin tray well.

  • The riper the banana the sweeter the muffin
