BEAUTY BERRY ENERGY BALLS

INGREDIENTS:

  • ½ cup dried dates

  • 1 sachet Beauty Berry porridge

  • ½ cup LSA, plus extra

  • 1-3 TBS water (as needed)

EQUIPMENT:

  • Bowl

  • Food processor

  • Spoon

METHOD:

  1. Soak the dates in 1 cup of hot water for 20 minutes. Drain and rinse.

  2. Combine the dates, Beauty Berry porridge and LSA in the food processor, or high powered blender. Process until the mixture comes together when pinched between two fingers. If it is still too dry, add 1-3 tbs of water and process until it comes together.

  3. Roll tablespoons of the mixture into 6 balls. Roll in extra LSA to coat. Cover and place in the refrigerator for at least 20 minutes to set.

NOTES & TIPS:

  • Make in advance for a take to work high fibre and antioxidant energy boost mid morning or afternoon

  • LSA is made with Linseed, Sesame seeds and Almond meal

  • These vegan balls are perfect before a workout for an energy boost

  • Full of fibre, healthy monounsaturated fatty acids and antioxidants
